A ratio of moles of carbon dioxide produced to the moles of oxygen consumed during oxidation of a given amount of a nutrient. Approximate values:

  • carbohydrates 1.0
  • fat 0.7
  • proteins 0.8
When energy is given in excess of the need (especially as glucose) the RQ may increase above 1.0; which indicates fat synthesis.
