Any of a large group of organic acids made up of molecules containing a carboxyl group at the end of a long hydrocarbon chain; chiefly with an even number of carbon atoms, most frequently in the range of C12 - C20. Fatty acids with shorter, longer, branched and cyclic chains, and acids with an odd number of carbon atoms are less common.
